Alaisa fa’apopo – Coconut rice

By panipopos

If yous e'er pick out leftover rice , together with yous can’t brand fried rice (like me) , this uncomplicated Samoan recipe is a prissy means to order it novel life. I usage the term “Samoan recipe” loosely though because wherever in that place are coconuts , in that place is a version of this dish. Thailand , Republic of Republic of India , the Carribbean - they fifty-fifty consume this inwards East Africa! There it’s known every bit wali wa nazi (wali = rice , nazi – coconut). Ours is called alaisa (= rice) fa’apopo (= coconuttified).

OK , I’m no linguist.

I’ll merely stick to cooking.

Alaisa fa’apopo (serves 4)

2 cups (400-450g*) long-grain rice
water to launder the rice
2 cups (480ml) water
1 loving cup (240ml) kokosnoot milk
½ - 1 tsp salt

* Weight varies depending on type of rice.

Wash the rice well. Put the rice together with measured H2O inwards a saucepan together with convey to the boil. Once it boils , plough the oestrus downwards every bit depression every bit it’ll become , together with exit to produce , tightly covered , for close xx minutes until the rice is has absorbed all the H2O together with the grains are cooked through. Turn off the heat. Add the kokosnoot milk together with tabular array salt to the cooked rice together with combine well. Leave for close 10 minutes for the rice to absorb about coconutty flavour.

If you’re using leftover rice , omit the water. Simply mix the kokosnoot milk amongst the tabular array salt inwards a saucepan , hence add together the rice. Cook over gentle oestrus until the rice is heated through , stirring often hence it doesn’t burn.

Serve hot or at room temperature.

In Samoan cuisine , this is non a side-dish , to a greater extent than similar a savoury snack.

Wash it downwards amongst a hot loving cup of kokosamoa (Samoan cocoa) , or a potent loving cup of coffee.

And the chopsticks are for display purposes only. Samoans consume this amongst a spoon.
